Jareesh wheat crepes/ jareesh gothumai dosai
When Priya Suresh announced the event healthy recipes for diabetes my first thought went for this crepes or dosai only. Jareesh is a kind of cracked wheat available in Qatar. It was my friend who introduced this dosai for me, dosai made from this wheat is super thin and crispy. We usually make godhumai dosai by using wheat flour and rice flour, but this used by soaking the wheat, grind and ferment and make dosais. Cracked wheat is low in GI( avg 48) which is good for people with diabetes. I have also used organic brown flax seeds which helps in reducing cholesterol and also lessen the severity of diabetes. My friend told me to use both raw rice and parboiled rice but I used only parboiled rice as raw rice is not suitable for people with diabetes.
You can treat this dosai as our normal dosai , make any kind with them. I served them with healthy green chutney and yoghurt chutney which I will post later. You need:
Jareesh Wheat 2cups
Par boiled rice 1 1/4 cup
Urad Dhal 1/2cup
Sago 1/4 cup
Organic Brown Flax seed 2 tbsp.
Fenugreek seeds 1/2tsp
Salt
Olive oil
Preparation:
Wash the wheat, rice and dhal and soak them along with sago, flax seeds, fenugreek for 4-5 hours
Grind them to a fine , smooth batter, You can grind them in your mixer grinder itself.
Ferment them overnight. Mix salt and the batter is ready to be used
Heat the tawa and pour a ladleful of batter and spread them to make a thin crepe or dosai, remove excess batter, Pour a tsp of olive oil around the dosai . Cook for 2-3 minutes remove from tava and serve hot with chutney of your choice.
