Jareesh wheat crepes/ jareesh gothumai dosai

When Priya Suresh announced the event healthy recipes for diabetes my first thought went for this crepes or dosai only. Jareesh is a kind of cracked wheat available in Qatar. It was my friend who introduced this dosai for me, dosai made from this wheat is super thin and crispy. We usually make godhumai dosai by using wheat flour and rice flour, but this used by soaking the wheat, grind and ferment and make dosais. Cracked wheat is low in GI( avg 48) which is good for people with diabetes. I have also used organic brown flax seeds which helps in reducing cholesterol and also lessen the severity of diabetes. My friend told me to use both raw rice and parboiled rice but I used only parboiled rice as raw rice is not suitable for people with diabetes.
You can treat this dosai as our normal dosai , make any kind with them. I served them with healthy green chutney and yoghurt chutney which I will post later. This dosai tastes best when eaten hot as I tends to be little chewy after it gets cold.  Sending this recipe to Priya Suresh's /announcing-healthy-diet-diabetic. event.
