Mee Goreng - Malaysian Fried Noodles

After a long time with my fav dish Mee Goreng, The word itself brings me memories of my childhood days where my grandmother would prepare this super delicious noodles in Singapore. MeeGoreng is a favorite Street Hawker Dish. It is a treat to the eyes to see them prepare this dish. This recipe calls for MEE which is fresh yellow egg noodles. Ive seen fresh noodles readily available in the market which is really tasty, very rarely we get fresh Mee in UAE( I prepared this recipe when I was in UAE) so I didnt want to miss the chance to prepare this yummy yummy noodles. If you store this Mee in the fridge you have blanch them before cooking

Now to the recipe

You need:

Mee/  Yellow Egg Noodles( fresh)        250gms
Oil                                                          3-4tbsp
Prawns (deveined)(medium)                 1/4cup
Chicken (Shredded)                               1/4cup
Egg (large)                                             2  nos
Tofu (cubed) (fried)                               3/4 - 1cup
Onion (sliced thin)                                 1 nos(large)
Tomato ( chopped)                                 1nos (large)
Peas (defrosted)                                      1/4cup
Potato (cubed) (fried)                             1/2 cup
Bean sprouts                                           1- 1 1/2 cup
Mustard greens/ Bok choy                      1 1/2 cup
Spring Onions                                          2 stalks( sliced)




Soy Sauce                                                1 tbsp
Tomato sauce                                           1 tbsp
Salt to taste
 Sugar                                                        1 tsp

 TO GRIND:
Dry Red Chilli (soaked in hot water)         3nos
Garlic                                                          4 cloves
Prawns                                                         3/4 cup( small)

Lemon wedges to garnish




Preparation:

Heat 1 1/2tbsp oil a in Wok add the ground paste and fry till oil seperates. Transfer to a bowl wipe the wok clean.
Heat the remaing oil add the onions and fry for two minutes, Add the chicken and fry for 3 minutes then add the prawns, tomato, mustard greens and fry in high flame for 2 minutes.
Add the chilli paste, tofu and bean sprouts and fry for 2 minutes, Add the sauces, salt n sugar, Mee and fry in high flame for 3-4 minutes.
Make a well in the center add the eggs and scramble . Mix all the ingredients .

Serve Mee Goreng with Lemon Wedges

NOTE:

Ive added Squids marinated in chili n haldi powder, and fried.
If mustard greens is not available then add Cabbage instead

Very nice noodles...looks so delicious dear. Malaysian and Singapore foods are always yummy for me.
