Gothumai ravai or Dalia or cracked wheat is something what we usually make upma for diabetic people. But here is the recipe for a delicious kheer and it is sinfully rich. This kheer is served compulsory in South Indian Muslim weddings. No wedding cuisine gets complete without this kheer and is usuallu topped with thakkali inippu pachadi (sweet tomato chutney) we call it either phirni or kanji. The kheer is so rich that people of all ages love it. Adding condensed milk, milk powder, oats and cardamom makes it so delicious.
I love adding sago or javvarisi especially the large ones but its purely optional. If you are making this kheer in a large quantity the pressure cook the gothumai ravai for a whistle  then continue with the recipe or if you want it lighter skip the condensed milk and milk powder.

You need:
Cracked wheat                      1/4cup
Milk                                      1 1/4cup
Oats                                      2tbsp
Condensed milk                     2  dessert spoon
Milk powder                         2 1/2 tbsp
Sugar                                    less than half cup
Salt                                       a very small pinch
Cardamom seeds                  1tsp
Ghee                                     1tbsp
Cashews                                2tbsp
Raisins                                    1tbsp

Preparation:
Soak the wheat for 1/2 an hour. Crush the cardamom seeds coarsely
Heat the ghee and fry the cashwe n raisins add the drained wheat and 3/4 cup water and cook for 10 minutes. Pour in the milk and the rest of the ingredients and  add 1 cup water and cook till the kheer is thick.
Serve hot or cold.
Note:
The kheer will thicken after it cools, add water or milk to bring back to the consistency
