Paneer & Vegetable Stew
My entry for Lets-brunch-on-sundays-event. by Priya Suresh. Made Paneer& Vegetable Stew for dinner and served with Idiyappam / String hoppers, Stew is basically a soupy kind of gravy made with coconut milk, you can make them with vegetables, chicken or mutton, each recipe tastes delicious, Usually served with Appam , I also serve with Idiyappam, which makes a good combo. I prefer to use Paneer with vegetables, it adds extra flavor and texture. Usually I use vegetable oil, but this time I used Coconut oil for the authentic flavor, Very easy n simple recipe to make.
You need:
Onion ( medium) 2nos
Green Chili 1-2 nos
Ginger Garlic paste 1 tsp
Pepper ( freshly ground) 1 tsp
Coconut oil 1 tsp
Coconut (medium) 1/2
Paneer (cubes) 100 gms
Mixed Vegetables 100- 150 gms
Curry leaves a handful
Salt
Preparation:
Steam the vegetables.
Grind the coconut and extract the first milk about 1 cup, then add 1 cup of water to the coconut, grind and extract 2nd milk.
Grind the onions, green chilli, ginger garlic paste to a fine paste.
Heat oil in a kadai add curry leaves, and the paste and fry till the raw smell disappears add pepper,
vegetables, paneer and salt, cook for a minute. Keep the flame low and add the 2nd coconut milk,
Cook them in low heat for 5-10 minutes. Finally add the 1st coconut milk. Let them cook for an additional 5 minutes in low flame. Remove from heat.
Serve them hot with appam / idiyappam
