Mom's Nasi Goreng

What would be the best dish apart from my mom's Nasi Goreng. Its one of my favorite dish prepared by her. This is Malaysian dish  would rather be called a one pot meal wonder. My mom always makes with Prawns and Beans but you can use Chicken instead of Prawns, it tastes good too( I've tried it many a times)
With perfectly boiled eggs and Prawn crackers its a sure win win recipe. i didn't have crackers so I made some crispy fried lady's finger( not very visible in photo), not a bad combo. Lets move to the recipe




You need:

Basmati Rice                          1cup
Shelled Prawns( medium)       1cup
Beans                                    5-6nos
Onion ( medium)                    1nos
Tomato (large)                       1nos
Ginger Garlic paste                1tsp
Chilli powder                         1tsp
Turmeric powder                   1/4tsp
Dark Soy Sauce                    1tsp
Ajinomoto                             small pinch
Salt
Oil                                        2tbsp
Hot water                             2cups



Preparation:

Wash and soak the rice.
Thinly slice the onions and chop the tomatoes.
Remove the top and bottom of beans and cut them diagonally about 1/2cm thick
Heat oil in a wide pan add the onions and fry them till they turn translucent add the beans fry for a minute , add the prawns and fry for a minute don't overcook them, they turn rubbery.
Then add chilli powder, turmeric powder fry for 30 seconds add the ginger garlic paste and fry for a minute more, now add the tomatoes and fry for about 2-3 minutes till they turn soft, add the soy sauce and ajinomoto.
Drain the rice and add it to the mixture along with salt and fry for a minute or so
Pour 2 cups hot water, check for salt and close the pan with tight lid, cook for about 15-20 minutes.
Check whether the rice is completely cooked, fluff them up with fork Serve hot with Perfectly boiled eggs and some prawn crackers



Note:
You can use raw rice or white rice instead of basmati, you just have to adjust the amount of water.
For more strong flavour you can add a tsp of belachan or shrimp paste, fry them in oil first then continue with the recipe. Beware your house will be completely filled with a wierd smell first but the final result of the dish will be lip smacking
