Carrot Halwa


One of the easiest and mouth watering dessert that can be prepared in few minutes. It is sure hit during any feast. It has got soft and creamy texture which just melts in the mouth.

You need
Carrot 250gms
Ghee 2 - 2 1/2 tbsp
Sugar 100 gms
Salt a very small pinch
Milk 1/2 cup
Thickened cream* 3 tbsp
Raisins 2tbsp
Elaichi powder 1/4 tsp




Preparation

First peel the carrots well.
Shred the carrots as thinly as possible
Heat the pan, add the ghee, when it starts to melt add the shredded carrots.
Saute the carrots till the raw smell disappears.
Add the sugar, milk, elaichi powder and salt.
Cook till the carrots are soft and the milk has reduced.
Now add the cream. Cook for about 7-10 minutes.
The halwa will now start to thicken. Add the raisins and mix well.
Now the delicious halwa is ready to be served. You can also decorate it with sliced almonds.

*You can also substitute condensed milk instead of thickened cream, but reduce the amount of sugar accordingly
